Amazing summer salad recipe
From Shelby Moose, Crossing Rivers Health Registered Dietitian
- Lettuce or mixed greens
- Sliced strawberries
- Sliced mango (to save time, buy frozen and thaw!)
- Feta cheese
- Raspberry vinaigrette (or dressing of your choice)
- Chicken breast
Feel free to add other ingredients you may like, such as avocado or red onion. YUM!
- Bake or grill the chicken breast.
- Slice chicken and place over your salad greens.
- Top with fruit, cheese, nuts, and any other ingredients you may want!
