Greek cucumber salad

Yield: 8 servings

  • 2 medium cucumbers or 4 small cucumbers sliced, chopped into quarters
  • 2 tomatoes chopped
  • ½ of a red onion sliced
  • ¼ cup of olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • ¼- ½ cup crumbled feta cheese to taste
  • Black olive pitted and sliced to taste
  • Salt and Pepper to taste


  1. Combine cucumbers, tomatoes, and red onion in a large bowl
  2. Combine olive oil, lemon juice, oregano in a small bowl
  3. Pour the dressing mixture over the cucumber mixture and combine
  4. Add the feta cheese and black olives, mix gently
  5. Season with salt and pepper to taste and store in the refrigerator
