Roasted Baby Red Potatoes


  • 3 lbs. baby red potatoes, unpeeled, quartered
  • 1 medium-size red onion, sliced
  • 2 tbsp. olive oil
  • Salt and pepper to taste


  1. Combine all ingredients in a large bowl, season with salt and pepper to taste
  2. Transfer mixture to a non-stick baking sheet and bake at 425 degrees for 30 min or until potatoes are soft and golden on the outside.
