Roasted Baby Red Potatoes
- 3 lbs. baby red potatoes, unpeeled, quartered
- 1 medium-size red onion, sliced
- 2 tbsp. olive oil
- Salt and pepper to taste
- Combine all ingredients in a large bowl, season with salt and pepper to taste
- Transfer mixture to a non-stick baking sheet and bake at 425 degrees for 30 min or until potatoes are soft and golden on the outside.
