Fresh Orange and Black Bean Salad
Very easy to prepare and delicious!
Fresh Orange and Black Bean Salad is also very healthy with the black beans, orange, sweet bell pepper, celery, green onion. Very good!
¼ cup orange juice
2 Tbsp. olive oil (or any oil you like)
¼ tsp. salt
3 cups canned black beans, rinsed and drained
2 oranges, peeled, cut in bite size pieces (may use mandarin oranges instead)
1 cup diced sweet red bell pepper
½ cup diced celery
½ cup diced green onions (may use a red onion instead)
¼ cup coarsely chopped cilantro
- In large bowl, combine orange juice, oil and salt
- Stir in remaining ingredients
- Chill before serving
- Makes approximately 8 half cup servings
Make it a meal by adding grilled shrimp or chicken!
